Gingerbread Pancakes

I've never actually made the gingerbread pancakes myself, but
I've eaten them at my sister-in-law's and they were very good.
I didn't realize just how much went into them until I dragged
the recipe out, so if you decide not to make them I'll
understand. :)


Recipe #2 - Gingerbread Pancakes

Ingredients:
2 tsp. instant coffee granules
1/4 cup boiling water
3/4 cup whole wheat flour
1/4 cup all-purpose flour
1 tsp. baking powder
1 tsp. salt
3 tbsp brown sugar
1/2 tsp ground ginger
1/4 tsp. ground cinnamon
1/8 tsp. ground cloves
2/3 cup milk
1 egg, lightly beaten
1 tbsp. vegetable oil

Combine coffee granules and boiling water, stirring until
granules dissolve.  Cool completely.

Combine whole wheat flour, all-purpose flour, baking powder,
salt, brown sugar, ginger, cinnamon, and cloves in a medium
sized bowl.

Combine coffee mixture, milk, egg, and oil; add mixture to dry
ingredients, stirring just until dry ingredients are moistened.

Preheat nonstick griddle to 325F.  For each pancake, pour 1/4
cup batter onto hot griddle; spread batter to about a 5-inch
circle.  Cook pancakes until tops are covered with bubbles and
edges look caked, then turn over and cook the other side.

Especially delicious with applesauce or apple butter.
